Ingredients

Instructions

  1. Cut the old fowl into very small pieces.
  2. Place the cut chicken in a pot with two quarts of cold water, a few peppercorns, allspice, and salt.
  3. Cover the pot and let it boil slowly until the chicken falls into shreds, about four hours.
  4. Strain the broth through a sieve or cloth.
  5. If desired, thicken the broth with a little vermicelli.
  6. Just before serving, whip the yolk of an egg with a little lemon juice.
  7. Stir the egg-lemon mixture into the hot broth and serve.
