Fritters (Beef)

Instructions

  1. Have these ready: some cold roast beef; flour; a cupful of water; 2 oz. butter; the whites of 2 eggs; salt, pepper, and a scraping of nutmeg.
  2. Mix the flour to a smooth batter with the water, or with milk.
  3. Melt the 2 oz. of butter and stir it into the flour with the whites of 2 eggs, whisked.
  4. Shred the beef as thin as possible, season it to your taste with the salt, pepper, and a scraping of nutmeg, and add it to the batter; mix all well together.
  5. Drop the mixture with a spoon into boiling dripping or lard.
  6. Drain well from the fat. Serve hot.
  7. Skim milk can be used instead of water; and by substituting half a teaspoonful of soda, no eggs need be used for the batter.
