Ingredients

Instructions

  1. Combine the lump sugar, cut or bruised ginger, lemon juice and peel, and cream of tartar with 2 gallons of boiling water.
  2. Allow the mixture to cool.
  3. Once cool, add a tablespoonful of yeast on toast and let it stand for twelve hours.
  4. Strain through a coarse cloth.
  5. Bottle and tie the corks down firmly.
  6. If using within three days, add the white of one well-beaten egg just before corking as an improvement.
