Ginger (Admiral Etheridge)

Ingredients
- 1 lb Lump Sugar
- 2 oz best Ginger
- 3 Lemons
- 2 gallons boiling Water
- 1 oz Cream of Tartar
- 1 tablespoonful yeast on toast
- 1 egg white
Instructions
- Combine the lump sugar, cut or bruised ginger, lemon juice and peel, and cream of tartar with 2 gallons of boiling water.
- Allow the mixture to cool.
- Once cool, add a tablespoonful of yeast on toast and let it stand for twelve hours.
- Strain through a coarse cloth.
- Bottle and tie the corks down firmly.
- If using within three days, add the white of one well-beaten egg just before corking as an improvement.
