Brood Kluitjes (Bread Dumplings)

Ingredients

Instructions

  1. Soak three large slices of stale white bread in broth until quite soft.
  2. Squeeze out the broth well and stir the bread into a saucepan with a spoonful of butter.
  3. When well mixed, let it cool.
  4. Add salt, pepper, nutmeg, and finely chopped parsley to the mixture.
  5. Beat up two eggs and stir them into the mixture.
  6. Form the mixture into little round balls and roll each one in flour.
  7. Add the dumplings to a stewed chicken or good clear soup.
  8. Let them boil up once; they will be found light and nourishing.
