Brood Kluitjes (Bread Dumplings)

Ingredients
- 3 large slices stale white bread
- broth
- 1 spoonful butter
- salt
- pepper
- nutmeg
- parsley
- 2 eggs
- flour
Instructions
- Soak three large slices of stale white bread in broth until quite soft.
- Squeeze out the broth well and stir the bread into a saucepan with a spoonful of butter.
- When well mixed, let it cool.
- Add salt, pepper, nutmeg, and finely chopped parsley to the mixture.
- Beat up two eggs and stir them into the mixture.
- Form the mixture into little round balls and roll each one in flour.
- Add the dumplings to a stewed chicken or good clear soup.
- Let them boil up once; they will be found light and nourishing.
