Jurjāniyya (Pomegranate-and-Walnut Meat Stew)

Ingredients

Instructions

  1. Cut meat into medium pieces, leave in the pot with water to cover and a little salt; cut onion fine.
  2. At the boil, set onion on top with dried coriander, pepper, ginger, and cinnamon finely pounded; optionally add peeled walnuts cut medium. Stir until cooked.
  3. Pound sour pomegranate seeds and black raisins in equal parts, rub with water, strain, and add with a little vinegar.
  4. Enrich with peeled almonds pounded fine; when boiling and near done, sweeten with a little sugar.
  5. Throw a handful of jujube on top, sprinkle rosewater, cover until settled, and remove.
