Honing Koek (Honey Cake)

Ingredients
- 6 lb Flour
- 2 lb Sugar
- 1.5 quart bottles Honey
- 1 dessertspoonful Cloves
- 2 dessertspoonfuls Cinnamon, pounded
- Potash
- 1 wineglass Brandy
- 2 teaspoonfuls Soda
- Butter
- Preserved citron, cut into strips
Instructions
- Boil the sugar and honey together.
- Add one dessertspoonful of cloves and two dessertspoonfuls of pounded cinnamon; remove from the fire.
- Add the weight of an egg in potash and one wineglass of brandy.
- Mix the flour with two teaspoonfuls of soda.
- Mix the hot syrup and flour well together, working the dough well with the hands.
- Roll out the dough thinly.
- Put into a buttered pan and bake in a slow oven for one hour.
- Cut into squares.
