Būrān (Fried Eggplant with Garlic Yogurt and Meat)

History
Būrān (بوران) is the eponym of a whole family of eggplant dishes. Al-Baghdadi's recipe fries salted eggplant, beats it smooth until it resembles khabīṣ, folds in Persian yogurt (laban fārisī) mixed with garlic, and crowns it with small meatballs browned in tail-fat, finished with cumin and cinnamon. The name traces to Būrān — born Khadīja, daughter of al-Maʾmūn's vizier al-Ḥasan ibn Sahl — whose marriage to the caliph in December 825 at Wasit was so lavish it became proverbial as the "Invitation of Islam" (Daʿwat al-Islām). Tradition credits Būrān (in some tellings the gastronome-prince Ibrāhīm ibn al-Mahdī) with a wedding dish of fried eggplant and, crucially, with the trick of salting and rinsing the slices to draw out their bitterness — a discovery said to have turned a scorned vegetable into a prestige food and to have spawned the many burrāniyyāt named in her honour. That naming legend is best read as attributed lore rather than settled fact. Eggplant itself (bādhinjān, an Arabized Persian word of ultimately South Asian origin) had entered Arab kitchens after the 7th-century conquests and travelled west through the Islamic world into al-Andalus, where its yogurt-and-vegetable būrānī progeny survive as Turkish, Balkan, Spanish and North African cousins. Al-Baghdadi thus curates a dish already centuries old by 1226.
Ingredients
- eggplant (bādhinjān)
- sesame oil (shīraj)
- salt
- dried coriander
- Persian milk (laban fārisī)
- garlic (thūm)
- lean red meat
- fresh tail fat
- cumin and cinnamon
Instructions
- Parboil eggplant in salted water, drain, then fry in fresh sesame oil until done; peel.
- Mash the eggplant smooth with a spoon; mix in a little salt and dried coriander.
- Mix garlic into Persian milk (kashk), pour over the eggplant and blend well.
- Form small kubab of pounded lean meat; sweat sliced meat in rendered tail fat, cover with water and cook down until it returns to its fat.
- Spread the meat over the eggplant, dust with pounded cumin and cinnamon, and serve.
