Curry (Another Mutton)

Instructions
- Take three pounds of mutton out of the leg, cut it into small square pieces, and put it into the pot.
- Slice up a large onion thinly and put it on the top of the meat.
- Make a paste of two tablespoonfuls of curry powder, one tablespoonful of brown sugar, and two tablespoonfuls of vinegar. If apples are in season, slice up two or three and add them to it.
- Stir all together and put this on the top of the sliced onions.
- Shut up the pot and let it simmer gently. No water is to be added.
- After an hour, stir all well together, then let it simmer gently another hour.
- Just before serving, if it should be dry, add half a cup of milk and a tablespoonful of tomato sauce.
- Serve with rice.
