Cho-damneun-beop (Making Vinegar)

Ingredients
- 4 doe (starter) + 3 doe (main) wheat
- oak/paper-mulberry leaves
- 1 mal ordinary rice
- 1 doe nuruk
- 1 donghae fresh water
- 1 east-reaching peach branch
Instructions
- Steam 4 doe of wheat until it falls apart, cover with leaves, mold it thoroughly green, dry, and sift well.
- Early in the seventh month, soak 1 mal of ordinary rice with a fresh donghae of water, cover away from light, and steam into rice when cooled by midday.
- Layer in the crock: 1 doe nuruk at the bottom, 3 doe wheat, then the warm rice; pour in 1 donghae of water and cover with clean cloth.
- Bind with raw hemp about seven times, cover fully; after seven days stir with a broken east-reaching peach branch, leave, and use.
