Cream (Devonshire)

Instructions

  1. Strain new milk from the cow into large flat pans, or tins.
  2. Let it stand for twenty-four hours in winter, twelve in summer, to allow the cream to rise.
  3. Then place the pans on a hot dresser, or a gas stove not too hot, and let it warm gently till just on the point of boiling.
  4. Take the pans off the stove and set it aside to cool.
  5. When cold, skim the cream. Heap it on a dish, and serve.
