Preserve (Fig) (Old Cape Recipe.)

Instructions

  1. To preserve white figs whole, take them nearly ripe and peel them thinly, but leave the stalks on.
  2. Lay them for a night in lime water, and the next morning prick them with a needle.
  3. Take the weight of the fruit in sugar and make a thick syrup, taking less water than cups of sugar.
  4. Lay the figs in the syrup and boil gently till the figs are transparent and the syrup thick.
