Chicken Mould (Cold Meat)

Instructions

  1. Pound about one pound of the white meat of a chicken and a quarter of a pound of ham together in a mortar.
  2. Add to this two ounces of butter, three eggs well beaten, and a quarter of a pint of whipped cream.
  3. Flavour with a little cayenne, some salt, and a little nutmeg, and mix all well together.
  4. Steam for twenty minutes.
  5. Serve with oyster or tomato sauce. For luncheon.
