Curry (A Good Mutton)

Instructions

  1. Cut 1 lb. of mutton into nice little pieces — thick rib makes a nice dish.
  2. Fry the mutton and 2 large onions a nice brown.
  3. Cut 2 sour apples or tomatoes in slices and mix them with the curry powder, 2 teaspoonfuls of sugar, the vinegar, and the salt. If you are not sure of the curry powder, add a teaspoonful of Indian curry paste. Stir all well together.
  4. If the meat is lean, a small piece of butter is an improvement.
  5. Simmer gently for two hours.
  6. Serve with boiled rice.
  7. Cold meat cut in slices and simmered in this mixture of curry for two hours does very well.
