Curry (A Good Mutton)

Instructions
- Cut 1 lb. of mutton into nice little pieces — thick rib makes a nice dish.
- Fry the mutton and 2 large onions a nice brown.
- Cut 2 sour apples or tomatoes in slices and mix them with the curry powder, 2 teaspoonfuls of sugar, the vinegar, and the salt. If you are not sure of the curry powder, add a teaspoonful of Indian curry paste. Stir all well together.
- If the meat is lean, a small piece of butter is an improvement.
- Simmer gently for two hours.
- Serve with boiled rice.
- Cold meat cut in slices and simmered in this mixture of curry for two hours does very well.
