Cake (Pound)

Instructions

  1. Whisk 13 eggs, the whites and yolks separately.
  2. Stir the butter to a cream, then add 1 lb. of sugar, dry and sifted, then the yolks, well whisked.
  3. Then add the flour with the spices -- a teaspoonful of mixed cinnamon, naartje (tangerine orange) peel dried and powdered, and some nutmeg -- previously well mixed together.
  4. Lastly add the whites.
  5. Have a well-buttered mould dusted with fine biscuit, and a buttered paper on the top of the mould.
  6. Bake in a moderate oven for two hours.
