Maqlūbat al-Shiwāʾ (Maqlūba of Cold Roast)

Ingredients

Instructions

  1. Pound cold roast meat (shiwāʾ) finely with a cleaver.
  2. Add the known spice blend and walnut kernels.
  3. Proceed as in the maqlūba method, binding with eggs, forming patties, and frying.
  4. For a soured version (muḥammaḍa), sprinkle a little lemon juice over it.
