Mujazzaʿa (Chard-and-Milk Meat Stew)

Ingredients

Instructions

  1. Cut fatty meat into medium pieces, boil in a little salted water to cover, and skim the froth.
  2. Set two or three cut onions on top; add two or three bunches of chard washed and cut to about four fingers.
  3. Add dried coriander, cumin, mastic, cinnamon, and pepper; cook.
  4. Add Persian (soured) milk mixed with pounded garlic as needed.
  5. When the pot settles, sprinkle a little nigella on top, wipe sides, and remove.
