Mujazzaʿa (Chard-and-Milk Meat Stew)

Ingredients
- fatty meat
- salt
- onion
- chard
- dried coriander
- cumin
- mastic
- cinnamon
- pepper
- Persian milk
- garlic
- nigella
Instructions
- Cut fatty meat into medium pieces, boil in a little salted water to cover, and skim the froth.
- Set two or three cut onions on top; add two or three bunches of chard washed and cut to about four fingers.
- Add dried coriander, cumin, mastic, cinnamon, and pepper; cook.
- Add Persian (soured) milk mixed with pounded garlic as needed.
- When the pot settles, sprinkle a little nigella on top, wipe sides, and remove.
