Rukhāmiyya (Marble Rice-and-Milk with Meat)

Ingredients

Instructions

  1. Cook rice in milk until it sets thick.
  2. Ladle out and top with meat fried in tail-fat and spices as meatballs (as in Isfānākhiyya); dust with cinnamon.
  3. Alternate method: boil the meat, and when done with moisture reduced, add fresh milk as needed with cinnamon sticks and mastic.
  4. When boiled well, add washed rice as it takes; cook until set smooth, ladle out, and top with the fried meat and cinnamon.
