Sauce (Dutch), for Fish (Mrs. Kotze's Recipe.)

Instructions

  1. Whip up the yolks of the eggs well in a small saucepan with a tablespoonful of tarragon vinegar, and some salt.
  2. Keep stirring over the fire till the consistency of rich custard. Don't let it boil.
  3. Then take 2 oz. of butter and stir that in on the fire, keeping stirring all the time.
  4. Lastly, add a tablespoonful of cream. Time, about six or seven minutes. It must be served at once.
