Preserve (Seville or Bitter Orange) (Mrs. Etheridge.)

Instructions

  1. Scrape the rind with a blunt knife or a piece of glass.
  2. Cut four small incisions at the bottom, then put the oranges in water for four days, changing the water daily.
  3. Boil the oranges until soft, putting them into boiling water. Squeeze them out well.
  4. Have ready the syrup — for twelve pounds of fruit, eighteen pounds of sugar.
  5. Let the oranges lie for a night in the syrup before preserving.
