Lift Mukhallal Muḥallā (Sweetened Pickled Turnip)

Ingredients
- turnip
- salt
- cloves
- aromatic spice blend
- vinegar
- ūqiyya per raṭl of vinegar honey
- saffron
Instructions
- Peel medium turnips and cut small; sprinkle with a little salt, cloves, and aromatic spices, and rub well by hand.
- Stir two ūqiyya of honey into each raṭl of vinegar and tint with a little saffron.
- Pour the sweetened vinegar over the turnip to cover, seal in a glass jar, and leave until matured, then use.
- Alternatively (unsweetened): parboil the cut turnip lightly in salted water, dust with cloves, cover with plain vinegar, and use once matured.
