Khuḍayriyya (Green Fava-Bean Meat)

Ingredients
- fatty meat
- tail fat
- dirham salt
- dried coriander
- cinnamon sticks
- green coriander leaves
- green fava beans (bāqilā)
- lean red meat
- spice mix
- eggs
- rosewater
Instructions
- Render tail fat, discard cracklings, sweat small-cut fatty meat with a dirham salt and coriander until colored.
- Cover with water, add thin cinnamon sticks and green coriander, boil and skim.
- Peel, scald, wash and drain the green fava beans.
- Add small kubab of pounded lean meat, then the fava beans; stir.
- When cooked, add cumin, pepper, ginger and mastic; arrange whole eggs on top, dust with cinnamon, sprinkle rosewater, settle and take up.
