Pie (Pigeon)

Source: Hildagonda J. Duckitt, 1891

Instructions

  1. Gather these ingredients: 4 young pigeons; pepper, salt, and gravy; and butter.
  2. Lay a rim of paste round the sides and edges of a pie-dish.
  3. After the pigeons are cleaned, halve them and season them as you would any other pie.
  4. Add a few slices of ham, some hard-boiled eggs, and a cup of good stock or gravy.
  5. Cover with puff paste, ornament the top, and stick four of the little feet out of it.
  6. Brush over with egg and milk, and bake an hour and a half. If the oven is very hot, lay a buttered paper over the pie crust to prevent its burning.
