Baṣaliyya (Onion-Style Meat)

Ingredients

Instructions

  1. Render fresh tail fat, discard cracklings; add lightly-sliced fatty meat and stir until colored.
  2. Cover with water, add a little salt, green coriander and cinnamon stick; boil and skim.
  3. When reduced, add peeled crosswise-cut white onion (about half the meat's weight), washed in salted water.
  4. Season with cumin, coriander, pepper, mastic and cinnamon finely pounded; optionally color with saffron.
  5. For a sour version add ~10 dirhams lime juice or vinegar; settle over the fire, wipe sides and take up.
