Toad in the Hole

Ingredients
- lbs Loin of Mutton
- 1 pint Skim Milk or Buttermilk
- 1 eggspoon Pepper
- 1 dust Nutmeg
- 1 tablespoon Flour
- 1 tablespoon Tomato Sauce
- 1 oz melted Suet or clarified Dripping
- 1/2 teaspoon Carbonate of Soda
- 1.25 cups Flour
Instructions
- Cut the mutton into cutlet shapes.
- Roll the cutlet shapes in flour, salt, and spices.
- Lay the cutlets in a dish.
- Pour over them one tablespoonful of tomato sauce and a quarter of a cup of water.
- Mix up the batter with flour, skim milk or buttermilk, melted suet or clarified dripping, and carbonate of soda stirred into the dry flour.
- Pour the batter on top of the mutton.
- Put the pie-dish in the oven and bake for one and a half hours.
