Custard in Cups

Ingredients
- 1 pint milk
- 4 eggs
- 3 oz white sugar
- cinnamon or vanilla essence
- 1 wineglass brandy
Instructions
- Boil the milk in an enamelled saucepan with the sugar and your chosen flavouring (if using vanilla essence, add it after the custard is made).
- Let the milk steep by the side of the fire until well seasoned.
- Whisk the eggs well.
- Bring the milk to a boiling point, then strain it into a basin.
- When the milk has cooled slightly, stir in the whisked eggs.
- Strain this mixture into a jug.
- Place the jug in a saucepan of boiling water over the fire.
- Keep stirring the custard in one direction until it thickens, but do not allow it to reach boiling point or it will curdle and become full of lumps.
- Remove from the fire and stir in a wineglass of brandy if desired.
