Mutton Chops (A favourite Cape dish)

Ingredients
- mutton chops
- fat or lard
- bread-crumbs
- fine biscuit
- pepper and salt
Instructions
- Cut the mutton chops from a well-hung loin or neck.
- Beat them thoroughly with a wooden kitchen mallet.
- Dip each chop in boiling fat or lard.
- Coat in bread-crumbs or fine biscuit mixed with pepper and salt.
- Heat your gridiron well over wood coals.
- Lay the chops on the hot gridiron and broil to a nice brown over a quick fire, turning occasionally.
- Serve with a mould of mashed potatoes or tomato sauce.
