Mutton Chops (A favourite Cape dish)

Instructions

  1. Cut the mutton chops from a well-hung loin or neck.
  2. Beat them thoroughly with a wooden kitchen mallet.
  3. Dip each chop in boiling fat or lard.
  4. Coat in bread-crumbs or fine biscuit mixed with pepper and salt.
  5. Heat your gridiron well over wood coals.
  6. Lay the chops on the hot gridiron and broil to a nice brown over a quick fire, turning occasionally.
  7. Serve with a mould of mashed potatoes or tomato sauce.
