Tuffāḥiyya (Sour Apple Meat Stew)

  1. Cut fatty meat into small elongated pieces, boil with a little salt and some dried coriander until near done, and skim off the froth.
  2. Set cut onion on top with a stick of cinnamon, pepper, mastic, and ginger finely pounded, plus mint sprigs.
  3. Seed sour apples, pound in a stone mortar, press out the juice, and pour over the meat.
  4. Enrich with a little peeled almonds; keep the fire going until cooked, then leave to settle.
  5. Optionally add a jointed chicken to cook along with it, and remove.
