Maṭjan (Pan-Fried Kid in Aged Murrī)

Ingredients
- suckling kid
- vinegar
- sesame oil
- dried coriander
- cumin
- cinnamon
- aged fermented sauce
- fresh lemon juice
Instructions
- Scald a suckling kid, wash it well, and cut it on its joints.
- Boil the pieces in vinegar, then dry them after boiling.
- Fry in fresh sesame oil (shīraj) and dress with finely ground dried coriander, cumin, and cinnamon.
- When browned, lift from the pan and set in aged fermented sauce (murrī ʿatīq).
- Sprinkle with finely ground coriander and cinnamon, squeeze fresh lemon juice over, and serve.
