Maṭjan (Pan-Fried Kid in Aged Murrī)

Ingredients

Instructions

  1. Scald a suckling kid, wash it well, and cut it on its joints.
  2. Boil the pieces in vinegar, then dry them after boiling.
  3. Fry in fresh sesame oil (shīraj) and dress with finely ground dried coriander, cumin, and cinnamon.
  4. When browned, lift from the pan and set in aged fermented sauce (murrī ʿatīq).
  5. Sprinkle with finely ground coriander and cinnamon, squeeze fresh lemon juice over, and serve.
