Ḥinṭiyya (Wheat Porridge with Meat)

Ingredients

Instructions

  1. Sweat medium-cut fatty meat in rendered tail-fat, then add salt, ground coriander and cinnamon pieces.
  2. As it nears done, add water proportioned to the wheat plus a little dry dill; boil hard.
  3. Add lightly cracked, washed hulled wheat and remove the dill; cook until firmly set.
  4. Rest an hour, lift off, dust with pounded cumin and cinnamon, and squeeze fresh lemon over if desired.
