Source: Hildagonda J. Duckitt, 1891

Instructions

  1. Extract the juice from 2 lb. of blackberries by putting them in the oven in a jar for a few hours.
  2. Strain through a muslin bag placed over a cullender or strainer.
  3. Soak half an ounce of gelatine in a little water.
  4. Add it to the blackberry juice, with a quarter of a pound of sugar, and boil all for half an hour.
  5. Put into a wet mould and turn out next day. Serve with cream.
  6. This will do for mulberries, only taking more sugar.
