Maṭjan Nāshif (Dry Pan-Fried Kid)

Ingredients

Instructions

  1. Boil a kid, cut on its joints, in vinegar.
  2. Fry in sesame oil (shīraj).
  3. Sprinkle with finely ground cumin, coriander, and cinnamon.
  4. For a plain version (sādhij), boil in water instead of vinegar, fry in sesame oil, and sprinkle with the same spices only.
