Icing for Cakes (Almond)

Instructions

  1. You will need almonds, finely pounded loaf sugar, and the whites of 2 eggs.
  2. Blanch the almonds and pound them in a mortar, adding a little cold water or white of egg during the pounding to keep the almonds from oiling.
  3. Whisk the whites of 2 eggs to a stiff froth, mix with the almonds, and beat well together to a smooth paste.
  4. Ice the cake with a broad knife, adding layer upon layer and allowing it to dry in between.
