Dīnāriyya (Dinar-Coin Meat)

Ingredients

Instructions

  1. Render tail fat, sweat small thin fatty meat, add a dirham salt and coriander; cover with water, cinnamon stick and green coriander; boil, skim and add peeled onion pieces.
  2. Pound lean meat with spices and shape into dinar-like discs; add.
  3. Add coin-cut pared carrots.
  4. Add coin-cut boiled eggs (optionally fried in sesame oil first).
  5. When cooked, season with mastic, pepper and cumin; sprinkle ~10 dirhams aged murrī with ~3 dirhams vinegar; dust with half a dirham cinnamon, settle and take up.
