Jūdhāba of Fresh Dates (Jūdhābat al-Ruṭab)

Instructions

  1. Sprinkle rosewater in a tinned copper pot, spread a dough sheet, and lay a bed of fresh khāstawī dates.
  2. Scatter finely pounded pistachios, almonds, and toasted poppyseed; repeat dates and toppings until the pot is half full, topping with almonds and pistachios.
  3. Pour over half a raṭl of syrup and an ūqiya of saffroned rosewater; cover with a dough sheet.
  4. Hang above a fat chicken stuffed with sugar, almonds, and pistachios kneaded with rosewater and saffroned inside and out; when thoroughly cooked, lift off.
