Poffertjes (An Old Dutch Pudding Recipe)

Instructions

  1. Add the butter to boiling milk or water, then stir the flour into it gradually over the fire until it ceases to adhere to the saucepan or spoon.
  2. Let the mixture cool on a dish, then stir in the egg, yolks and whites whisked separately.
  3. Put the lard into a saucepan. When it boils well, put in lumps of dough about a teaspoonful at a time.
  4. Keep the puffs down with a skimmer, as they will rise to the top of the fat, until they are a light brown colour.
  5. Serve hot with white sugar.
