Eggs (Curried) (Cape Recipe)

Instructions

  1. Rub to a paste the curry powder, 1 tablespoonful of vinegar, 1 teaspoonful of sugar, the salt, and a large onion cut small and fried in the butter.
  2. Mix with the rich stock and simmer this mixture well.
  3. Break 6 eggs into it and let it simmer till done, like poached eggs.
  4. Serve quickly. Time, about twenty minutes in all. Makes a nice breakfast or lunch dish for four people.
