  1. Wrap the meat in cloth on a board and press it often — it dries within a day; slice into thin flat pieces.
  2. In warm weather, thread the meat strips on cords and tie them in layers around a jar set on stones over a fire, turning to dry evenly.
  3. Alternatively, slice thin, spread on a flat riverside rock, press often, and turn to dry.
