Ḥubayshiyya (Raisin-and-Walnut Meat Stew)

Ingredients
- fatty meat
- salt
- onion
- carrot
- dried coriander
- cumin
- cinnamon
- mastic
- pepper
- black raisins
- vinegar
- walnuts
- mint
Instructions
- Cut fatty meat into medium pieces, boil in a little salted water to cover, and skim the froth.
- When near done, add cut onion washed with warm water and salt, and peeled carrot with core removed.
- Add dried coriander, cumin, cinnamon, mastic, and pepper.
- Pound black raisins, rub with water, strain, and combine two parts of that water with sharp good vinegar; add to the pot.
- Pound a little walnut, rub with the raisin water, and pour on top; rub dried mint over, leave to settle, wipe sides, and remove.
