Ḥubayshiyya (Raisin-and-Walnut Meat Stew)

Instructions

  1. Cut fatty meat into medium pieces, boil in a little salted water to cover, and skim the froth.
  2. When near done, add cut onion washed with warm water and salt, and peeled carrot with core removed.
  3. Add dried coriander, cumin, cinnamon, mastic, and pepper.
  4. Pound black raisins, rub with water, strain, and combine two parts of that water with sharp good vinegar; add to the pot.
  5. Pound a little walnut, rub with the raisin water, and pour on top; rub dried mint over, leave to settle, wipe sides, and remove.
