Cake (Genoa)

Instructions

  1. Stir the butter till it is like cream.
  2. Mix with it by degrees the eight ounces of castor sugar and four eggs, the yolks and whites beaten up separately.
  3. Then add ten ounces of flour and half a pound of raisins.
  4. Have ready the two ounces of almonds, blanched, and add them; and lastly the grated rind of one lemon, two teaspoons of baking powder, and 2 oz. of mixed candied peel.
  5. Butter the tin and line it with buttered paper, the paper to project half an inch above the rim of the tin.
  6. Pour in the mixture and bake in a cool oven for an hour and a half.
  7. Sprinkle a few cut-up almonds over the top.
