Ḥammāḍiyya (Sour Citron Meat Stew)

Instructions
- Cut meat into medium pieces, leave in the pot with water to cover and a little salt, and boil.
- Add a linen bundle of dried coriander, ginger, pepper, and cloves finely pounded, plus pieces of cinnamon.
- Pound red meat with spices, form into kebabs, add after one boil; when cooked, remove the spice bundle.
- Press seeded sour citron by hand, mix with about a quarter its measure of verjuice, add to the meat, and boil an hour.
- Add sweet peeled almonds pounded fine and enriched with water; sweeten with sugar or jullāb.
- Leave to settle, sprinkle rosewater, wipe sides, and remove.
