Croquettes of Chicken (Mrs. Dwyer's Recipe)

Instructions

  1. Mince fine about one pound of cooked chicken together with mushroom, tongue (or ham), and truffles.
  2. Season with the blade of mace and a little pepper.
  3. Have some rich stock reduced by boiling until quite thick.
  4. Stir the minced mixture well together with the reduced stock.
  5. Spread it on a dish an inch thick, cover with buttered paper, and set it to cool.
  6. Once cooled, divide into nice little balls.
  7. Dip each ball in beaten egg.
  8. Roll in bread-crumbs.
  9. Fry until a light brown.
