Croquettes of Chicken (Mrs. Dwyer's Recipe)

Ingredients
- 1 lb cooked chicken
- 1 lb mixed mushrooms
- truffles
- ham or tongue
- 1 blade of mace
- pepper
- rich stock
- 3 eggs
- bread-crumbs
Instructions
- Mince fine about one pound of cooked chicken together with mushroom, tongue (or ham), and truffles.
- Season with the blade of mace and a little pepper.
- Have some rich stock reduced by boiling until quite thick.
- Stir the minced mixture well together with the reduced stock.
- Spread it on a dish an inch thick, cover with buttered paper, and set it to cool.
- Once cooled, divide into nice little balls.
- Dip each ball in beaten egg.
- Roll in bread-crumbs.
- Fry until a light brown.
