Shīrāz bi-Buqūl (Strained Yogurt with Herbs)

Ingredients

Instructions

  1. Strip mint and celery leaves; chop mint, celery, and leek greens small and pound in a mortar.
  2. Mix well with shīrāz (strained curd yogurt), season with a little salt and pounded mustard.
  3. Scatter coarsely pounded walnut kernels over the top and use.
  4. If shīrāz is unavailable, substitute māst yogurt strained of its whey and mixed with a little sour yogurt.
