Shīrāz bi-Buqūl (Strained Yogurt with Herbs)

Ingredients
- mint
- celery
- leek greens
- shīrāz
- salt
- mustard
- walnut kernels
- māst yogurt
Instructions
- Strip mint and celery leaves; chop mint, celery, and leek greens small and pound in a mortar.
- Mix well with shīrāz (strained curd yogurt), season with a little salt and pounded mustard.
- Scatter coarsely pounded walnut kernels over the top and use.
- If shīrāz is unavailable, substitute māst yogurt strained of its whey and mixed with a little sour yogurt.
