Jam (Peach)

Instructions

  1. Peel and slice the "Clingstone" or yellow peach.
  2. Have ready a basin of water with a handful of salt in it, and lay the sliced peaches in this for half an hour.
  3. Take one pound less sugar than fruit.
  4. Oil the preserving-pot, then put in alternate layers of fruit and sugar, and a few cups of water.
  5. Stew gently till clear, and the syrup thick.
