Pears (Stewed) (Mrs. Etheridge.)

Instructions
- For every pound of pears take half a pound of soft white sugar to make a syrup, taking the same quantity of water as sugar.
- Boil the syrup till clear, then pour it boiling hot over the pears and cover the stewing-pan close.
- Boil briskly at first, then moderately, for four or five hours.
- Add the juice and peel of a lemon, and when the pears are nearly done, a glass of dark wine.
