Grated Cheese and Cauliflower (Chouxfleurs au Gratin)

Instructions

  1. Boil the milk with the chopped onion.
  2. Add the grated cheese (keeping a little for sprinkling afterwards) and let it boil up.
  3. Draw it aside and gradually add the yolk of the egg, pepper, salt, cayenne, and bread-crumbs.
  4. Mix all thoroughly and keep nice and warm.
  5. Boil the cauliflower nice and tender in a saucepan of water with the head downwards, leaving the pot open.
  6. Break the cauliflower into neat little pieces, removing all green and stalk.
  7. Pour the cheese mixture over the cauliflower on a baking-dish.
  8. Sprinkle a little more bread-crumbs and grated cheese on top.
  9. Bake for a few minutes in the oven and serve with cutlets.
