Spiced Ribs of Beef (Boned)

Instructions

  1. For ten pounds of beef, take a breakfast-cup of salt, two tablespoonfuls of sugar, a full teaspoonful of saltpetre, about twenty-four cloves, twenty-four allspice, and a teaspoonful of pepper.
  2. Bruise these and rub them well into the beef.
  3. Bone, roll, and skewer the beef, and leave it in the pickle for a week.
  4. Steam for three or four hours.
  5. Place between plates with weights on it to press it firmly together. Excellent — to be eaten cold.
