Tea Cakes ("Butter Biscuits")

Instructions

  1. Have these ingredients ready: 3 lb. of flour; 1 lb. of sugar; butter; eggs; 1 tumblerful of cold water; 2 tablespoonfuls of pounded rock ammonia, or sal volatile; 3 tablespoonfuls of caraway seeds, slightly bruised.
  2. Whisk up the eggs and mix with the butter and sugar; then mix all up together.
  3. Knead well, and roll out with a rolling-pin.
  4. Prick with a fork, and make into shapes with a wineglass, or any other mould.
  5. Bake for half an hour on buttered tins.
