Makshūfa ("Uncovered" Honey-Almond Sweet)

Ingredients
- part sugar
- part almonds or pistachios
- part honey
- part sesame oil
- saffron
- rose water
Instructions
- Take equal four parts of sugar, almonds (or pistachios), honey, and sesame oil.
- Pound the sugar and almonds and mix them together; dissolve enough saffron in rose water to color the sweet.
- Boil the sesame oil in the cauldron, add the honey, and stir until the froth rises.
- Add the sugar-and-almond mixture and keep stirring over a gentle fire until it nears setting; lift it off.
