Makshūfa ("Uncovered" Honey-Almond Sweet)

Ingredients

Instructions

  1. Take equal four parts of sugar, almonds (or pistachios), honey, and sesame oil.
  2. Pound the sugar and almonds and mix them together; dissolve enough saffron in rose water to color the sweet.
  3. Boil the sesame oil in the cauldron, add the honey, and stir until the froth rises.
  4. Add the sugar-and-almond mixture and keep stirring over a gentle fire until it nears setting; lift it off.
