Labaniyya (Milk Meat Stew)

Instructions
- Cut meat, boil in a little salted water to cover until near done and most water has dried off, leaving the fat.
- Add onion, cut washed leek, and parboiled eggplant split crosswise; then dried coriander, pounded cumin, mastic, cinnamon sticks, and mint sprigs.
- Boil in the remaining moisture until fully cooked.
- Add Persian (soured) milk mixed with pounded garlic; rub dried mint on top, wipe sides, leave an hour to settle, and remove.
