Dumplings (German Milk, "Kluitjes") (From a Recipe over a Hundred Years Old.)

  1. Boil half the milk, stir in the butter, then add the flour, stirring all the while on the fire until it is quite a thick paste.
  2. When it is cool, beat the 3 eggs into it.
  3. Boil the other half of the milk. Take up little pieces of the dough with a teaspoon, put them into the milk, and boil for a quarter of an hour.
  4. For the old German dish made with these dumplings, cut a young fowl into small joints and fry it with some butter and sliced onion to a nice brown.
  5. When it is brown, add about 1 pint of water and some red chillies.
  6. Stir some of the milk Kluitjes into this gravy a few minutes before serving.
